Our cuisine has a unique ingredient: history. The Archeologia Restaurant, with its 400 years, is not a simple setting, but an element of enhancement of every dish. To taste the grand tradition of Rome in our comfortable and refined halls is a unique experience, capable of satisfying who is searching for intimacy as well as who wants to spend some time in company. A unique emotion, that you will never get tired of repeating. The Archeologia wants to join the cuisine with culture, offering a unique occasion to immerse oneself in our regional cooking and to invite our guests to discover new flavors.
The Archeologia proposes two types of menus:
  • the “Archeologia cuisine ”, in which the gastronomical tradition of Lazio was revisited in a creative way by our chefs, under the supervision of Marco Vinicio;
  • the ”Rome and Lazio cuisine”, through which is proposed the traditional cuisine of the territory respecting – in the ingredients as well as the methods of preparation – the cooking of our region, the one that is tied to the rural and country culture, the one of our sea history as well as the magnificent and elaborated one, heir of the antique gastronomical culture of Rome.

The “Rome and Lazio cuisine” includes five menus:

    “Tuscia Cuisine”
    “Sabina Cuisine”
    “Roman Cuisine”
    “Ciociaria Cuisine”
    “Coastal Cuisine”

Through these five menus, our guests can know the “true” taste of the cooking of our territories of our regions without leaving the capital, like in a virtual trip.

Also the Archeologia proposes a vast choice of wine: about 200 types selected with the support of the AIS sommeliers.
Particular attention was given to the Lazio wine cellars.
